Honestly, I kinda want a spin-off where the characters all go to high school, and RWBY is just a side project of theirs, and the spin-off follows their other adventures that have little to nothing to do with RWBY.Β
When the idea is pitched to Weiss in episode 2, she complains about how a world without magic sounds awful, and Blake has some problems with the cat ears at first. Neo, the school band's lead singer, is upset that she has to play a mute, but is interested in the challenge (until she gets in an argument with Ruby near the end of V3 and Ruby changes the script again).
And halfway through S1, Ruby changes the script because she's sick of playing the innocent cinnamon roll all the time.
It eventually becomes apparent that the spin-off is set in a world where Ozma never freed Salem, and everything just continued like normal, and eventually technological advancements happened.
As a result, people have magic, Grimm aren't too dangerous or varied, and the gods are still hanging around somewhere.

So you want a spin-off where the characters are actors playing themselves? I don't know, I don't think that would work. A normal high school AU would be perfectly fine.
