I'm imagining his formerly human head can move around on his tree-derived body a lot more than it could on his original human body. Specifically, he could grow a much larger exterior shell of a head made from bark and wood which would have a retractable "tongue" tipped with his human face .
His human head might also be his only weak spot. The rest of his wooden body is almost indestructibly strong and heals supernaturally fast, yet decapitation or destruction of his head will kill him. Unfortunately for any would-be vampire slayers, he knows this and keeps his head retracted at all times except for when he's feeding and needs its fangs to be accessible.

Well, the head and heart are as much of a weak spot as in any vampire. However, decapitating something that is ~4 meters tall won't be easy. I am not even sure if it would work at all, as this vampire does not need fangs to feed as it can drain life force from earth as well as blood from humans with his root/branch appendages, that he can produce on the entire surface of his wooden suit. It's basically as if he was feeding constantly. Therefore it is quite possible that even what would be lethal for any standard vampire, this guy could potentially regenerate. Like I said before, the best way I see for defeating this guy would be somehow shooting him into the air and then pummeling him with extreme firepower, that will destroy his heart/head by the time he falls to the ground and has the chance to regenerate.
