Homemade Salmon and Asparagus Cooked in Parchment Paper, Served with White Rice.

RECIPE
Salmon and Asparagus Served with Rice

Ingredients

4 salmon fillets (about 6 ounces each)
1 pound asparagus, trimmed
1 small onion, sliced
2 lemons, sliced
Dill
2 tbsp margarine
Salt and pepper, to taste
Cooked white rice

Baking Instructions

1. Preheat oven to 400° F. Meanwhile, lay out 4 sheets of parchment (at least 13 by 13 inches), placing about 3 lemons slices to fit under each fillet. Gently place the fillets over the lemon slices.
2. Top with the dill, onions, and asparagus.
3. Place 1/2 tbsp of margarine on each fillet and season with the salt and pepper.
4. Pull the sides of the paper over each fillet, folding several times to seal. Fold and twist the ends to form rectangular parcels. Place them on a sheet pan.
5. Bake on lower rack of oven for 20 to 25 minutes.
6. Place a salmon parcel on each plate and cut open. Serve with the cooked rice.

*Makes 4 servings;
**Baked/cooked potatoes can be served instead of rice;
