Adjectives agree to gender in German.  'Kaffee' is a masculine noun, so 'perfekt' must gain the ending '-er' when placed before it. It changes depending on how the words are arranged, though:

„Ein perfekter Kaffee" ("A perfect coffee")

„Der perfekte Kaffee" ("The perfect coffee" -- 'der' and some other words make the R get dropped from 'perfekter')

„Der Kaffee ist perfekt" ("The coffee is perfect." -- the gendered ending gets dropped since the adjective is not in front of the noun.)
