My friend has trouble getting coffee from coffee shops, since it's hard to find one that has almond milk andΒ handles it in such a way that it doesn't get contaminated with soy milk.

This is another consequence of food intolerances becoming 'trendy'. In an ideal world, all people who handle food would be trained on avoiding cross-contamination, but because most people assume that you're just being hip rather than having an actual medical condition, they don't take due diligence.
(for the record, Ziro does not actually have allergies and is neither celiac nor lactose intolerant)

On the other hand, I have heard it argued that it would be much harder to find gluten-free bread products if gluten-free weren't trendy, and there probably is some truth to that. Once again, reality delivers an annoyingly mixed bag.

Labeling things that were never glutinous to begin with as gluten-free is, at least, mostly a first-world problem. Quinoa, on the other hand, used to be a vital part of the diet in the countries that grow it until it became too valuable as an export to eat themselves.Β And then the same people who loudest extol its virtues turn around and try to deny the benefits of golden rice to the people who grew it for them and now have nothing to eat.

There is a special hatred in my heart for those who sensationalize fear of GMOs. Golden rice is a great example, but just in general how are we supposed to solve problems if people are afraid of taking action to solve problems?
I didn't know that quinoa was becoming too valuable to eat by those who grow it. (I never liked quinoa anyway.)

Actually, I should clarify - PART of the quinoa problem is that it's too valuable as an export for domestic consumption. The other part is that people are using its prime growing land to grow drugs.Β Which is an entirely different problem (which I'm sure Ziro also has a paw in).
