Looks like the Countess has survived a brutal encounter with Vampire Hunters but still needs more blood to fully recover and heal her wounds that she received during the battle.
Since I guess what happened is that the Vampire Hunters staked her when she was sleeping in her coffin but they missed the heart (since maybe the staking the heart just parallelizes them) and before they had the chance to cut off her head she quickly lounged at them and used her vampiric powers to kill and drain them but it seems even their life blood wasn't enough to heal her wounds.
