in the last Arrancar encyclopedia they were bright blue, so I went with that color, I haven't been able to find official colors for his eyes

The official is blue. I believe Kubo has said they were blue. They're blue on the cover of one of volume 20 of the manga. I prefer blue, much prettier. He has beautiful eyes.
