It turns out that Katara always wished that she and Aang could have run away from his responsibilities as Avatar and just spend some time alone together as just Aang and Katara. She told Korra about this and that is why a certain Avatar and a certain mechanist had a 'honeymoon' in the Spirit World where literally no-one could find them.

Well, Katara saved them all at once because of her resoluteness in the face of overwhelming odds. The whole series was one big fight, so it's natural that they all save each other at various points, but she showed a good bit of character when she wouldn't give up while everyone else was weary.
She also saved Aang from taking many lives because she was so willing to openly and regularly show how much she cared for him. Even if they hadn't ended up together, that would've carried the same significance.
And it takes a lot of guts to stand up against systematic cultural bias. It takes an equal amount of guts to confront bias within yourself. I think she's one of the most well-realized characters, in that regard. It made no sense that Sokka was just willing to accept Zuko without being suspicious. This is the guy who suspected Aang of being a spy when they first met, and whose girlfriend was impersonated by Zuko's sister.
