The glowing eyes could be a reflection of light due to Hunter's feline eyes, but that is the boring answear.

In my eyes, I more went for the "Oh great, more enemies. And this should have been EASY!"

Still, you must admit. Imaging Spyro and Cynder having to almost tip toe around an enemy base without getting caught, then suddenly having Terrador just cannon-balling attack his way through the wall to the side and him proclaiming "Sorry, young warriors, got here as fast I could." would be pretty funny to see.

Awesome! I like how crowded and dangerous the whole scene looks. And their expressions speak for themselves. Goes to show that one doesn't have to show the armed enemies to "include" them anyways. Well done!

It's mostly an aesthetic choice and because it's a bit difficult to see Hunter's eyes in half-darkness.
And because feline animals eyes glow in the dark because of reflecting light.
And mostly it's just because it looks cool. I do know that Hunter's eyes doesn't ACTUALLY glow like that.
