I really like your take on the Kirin! Most of the time I see it depicted as a "pretty" creature but your made it into a kickass beast and I really dig that!
Also. It's horns = AWESOME!

"Been trying hard to get that lovely D&D manual look for character concepts, but still keeping the stuff that makes the style identifiable. looking at it now it seems like things are stuck in some sort've limbo that is half-cartoon, half-realistic...not sure what direction to head towards!"
I don't see the problem with how it is now. Stylized but reinforced with weight and anatomy. I think it's fine.

I just want to let you know I both hate and love you... *sob*
That aside love how this turned out and can't wait for you to finish posting up the rest of your tutorial on this beauty.

For some reason, dA's default for fullview size when you submit a picture is less than the original size. Whatever their process is for making it smaller probably causes some of the loss. Thankfully, you can turn that off when you submit. Also, you could try saving as a 24-bit png instead of a jpeg and uploading that to see if there's a difference in how dA handles it.

Yeah, JPEG is a lossy file format. It compresses the information and makes a smaller filesize by doing some guesswork. PNGs and TIFFs are lossless, but create larger files. Here's a guide that explains it all (helped me, anyway): [link]

What color are you painting in? RGB, CMYK, etc?

The format? It starts as a greyscale image during the sketch and tone phase, then I paste it into a new RGB file for color.

Hrm... Not really sure why you're losing detail. What's the working DPI and the DPI you upload it at?

300 DPI on the workfile. I don't think there's any DPI selection on DA's image uploader, but I will check.

There isn't but I wasn't sure if you were rescaling the image before upload. Are you saving it at JPG and uploading? If so, are you saving it as a Max Quality JPG? If you're not, there will be some loss and it may seem less detailed than the actual piece.
