Interesting for a sith, whose teachings embrace giving in to emotions, to be so OCD about being in control.
That symbol in the back is very familiar, is it from somewhere in Star Wars? I can't quite put my finger on it...reminds me a little of the Eight Pointed Star symbol used by the Chaos in Warhammer 40k.

yes; he has always had a bit of trouble to fully embrace the sith code, that is part of the reason why he prefers to work for the military, in a more organizational/desk job (it's a bit hard to explain for me in english, sorry).
he has always been a bit scared to just give in to his emotions, you never know where you might end up this way.
i have actually wondered for a short time if he would have made a better jedi, were he born into the republic; but i think not, because he is a very emotional and anxious person inside, and not at peace at all. he just shies away from using those emotions.
the symbol is the sith empire emblem from the time of the old republic.

Probably not anymore....
He might be, true.
If he had a choice, he'd likely not want to be force sensitive at all (though he wouldn't even admit that to himself).
