I remind you that in Archie Comic Tails he married Mina, when Tails was 8 years old, Mina was 16, she is twice the age of Tails and Amy is only 4 years old. In addition, in the classic versions of both characters, both Tails and Amy are 8 years old and, according to Sonic 4 although it makes no sense, Sonic CD occurs after Sonic and Knuckles, so in theory they were the same age but then to Amy for Sonic Adventure they made her older.

If only the supposed canon mattered, Amy would only be Sonic's partner ... Not even that because it really is a little reciprocated love. You started by saying that Tails and Amy have a big age difference when it's not true, they have a significant difference and it's not as if ages really matter (Rouge is supposed to be 18 when she is much older). It is a ship, with a minimum justification and enough, that you do not like the ship is something else. Besides, the canonical is not always a good thing. Why do you think everyone hates Elise? And that is canonical.
