I just generally get the feeling that the giants are pretty chill and laidback individuals when they're not fighting or invading a kingdom...I know there's mixed feelings towards the giant designs in DS2, but I think the faceless aspect is pretty awesome. As for why they're different to regular giants, well, they were technically in the company of Nashandra for an undisclosed amount of time before Vendrick met her. Perhaps this is what happens when a giant is corrupted/hollowed/cursed?
