He always knew how to dance, he explained it a lil after the dance. He just didn't want to dance at the time, and he always hated looking bad. That is further backed by the fact when Rinoa was unconscious he said that he has always worried too much on what others thought of him, so he was insecure and a lone wolf. Thats it.
