I also like this coexistence of Men and Dwarves. I would certainly love to make some more pictures exploring this theme.
As you say, if there is any place in Middle-earth where Slavic inspiration can be used for illustrations, it is certainly eastern Rhovanion.
As for the architecture, the timber framing architecture is traditional only in some regions of Czechia, and similarly to Poland it is mostly associated with Germans.

Sure that's true, the most slavic region in Middle Earth, but there is one more thing. I'm very glad that Tolkien didn't copy earth cultures straight into Arda, even Rohirim aren't just Anglo-saxons but different. Gondor or Arnor there aren't any obvious connections. Nothing like Warhammer Fantasy where are just medieval nations under different names, although according to a typical western european optics all East of Germany is dumped into one Russia like entity called Kislev.
I created for one ma fanfic for LotR "potato easterlings" that populations of easterlings living north of the Sea of Rhun, who heavy drank.
So how is kożuch in Czech?

I wish it and Lake Town would've looked more like this in the Hobbit movies. I didn't really understand the use of Asian influences in the movies.

Indeed. In my imagination I view these cultures (Dale, Lake-town or the ancient Northmen) as inspired by medieval Central or North-eastern Europe.

That was the impression I got from Tolkien too, especially since the northern men cultures were related to the Rohan men, so I don't see why they would be vastly different from one another.

I actually had a theory that the men of Dale where descendants of escaped slaves from Rhun. Enslaved by the Easterling tribes and therefore adopting some of their Slavic like culture.

Not much is known about Dorwinion. It is once mentioned in the Hobbit as a land of strong wine and it is placed on one version of the Middle-earth map on the shore of the sea of Rhun. And then there is of course various speculation. More here: tolkiengateway.net/wiki/Dorwin…
