I can relate yet there are those rare occasions that make my brain wonder, like the topic of adoptive incest. If a person has an adopted sibling and said sibling is in love with them, is it truly wrong?

Technically it's not really wrong, especially if the two aren't blood-related. The thing is, people can't really look past in their mind. The two are still family. Regardless of being related or not. Especially if they grew up together.
But if they haven't lived together all that long. Let's say like a year or so. Then one can argue that it's kinda fair game.

well that topic came to my mind cause one of my art poker friends has an argument about that for the anime AoT, one thinks its wrong to pair Eren with Mikasa while the other doesn't

Well I'm on the side that says it's not wrong to pair those two up. Legitimately, if it wasn't for Eren and his family. Mikasa would've had nowhere to go. And over time Mikasa had become grateful towards Eren. That's why she's so protective of him. Not because she more or less sees him as a brother. But because she cares about him and doesn't want anything to happen to the person who gave her the will to live.
And honestly THIS pairing, is much better. Compared to those who ship Levi and Mikasa together. Despite the fact that Mikasa hates the man's gut. They're also blood relatives. Albeit distant.
