Description I'm kind of going on a crazy muffin making phase here. Ever since my husband admitted that he loves muffins, I can't stop making them.

I'm not normally a huge fan of muffins, because I'd rather have the sweet stuff, so I end up eating just one or two from each batch that I make (which is a good thing!).

I've been wanting to bake something with buttermilk since I have a few cups left that is about to go bad in a few days and I hate wasting food so I was really glad when I found this recipe. Now I need to find another use for the rest of my buttermilk (...to be continued).

I haven't tried them yet, and they are slightly overcooked (I think?) but they look okay
Buttermilk Oatmeal MuffinsSOURCE: [link]

Ingredients
1 cup quick-cooking oats
1 cup buttermilk
1 egg, beaten
1/2 cup packed brown sugar
1/4 cup vegetable oil
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Directions
In a bowl, soak oats in buttermilk for 15 minutes. Stir in egg, sugar and oil. Combine flour, baking powder, baking soda and salt; stir into oat mixture just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400 degrees F for 16-18 minutes or until muffins test done. Cool in pan 5 minutes before removing to a wire rack.

Makes 8 regular sized muffins.

**If buttermilk is unavailable in your country, you may substitute it by adding 1 tbsp. lemon juice or white vinegar to 1 cup milk. Allow it to sit at room temperature for 5 to 10 minutes. Read more about it here: [link]

I had actually never heard of the stuff until a few weeks ago. I don't think it's very popular in Canada either (or this part of Canada).

Actually, there's an easy way to make it at home if you can't find any in your Country. Add 1 tbsp. lemon juice or white vinegar to 1 cup milk. Allow it to sit at room temperature for 5 to 10 minutes.

I once read about it too, but I think that you need whole milk... not the extremely watered down thing with a bit of white colorant they sell here. Even whole milk is thinner than the thinnest milk I've drank outside Mexico.

I haven't actually tried to replace the buttermilk with this recipe, but when I searched on google, I saw that lots of people do this instead
