Ultra Instinct is called 'Migatte no gokui' or 'Migatte no go kui' in Japanese. The former translates to 'Difficult to use' while the latter translates to 'Selfish selfishness/doctrine'. Ultra Instinct possesses both these things, as it is indeed difficult to use and it makes the user seem selfish(Goku has almost no emotions while fighting in UI, kinda like not giving a shit behavior). I don't know which one is actually used in the show, its likely the second one. So this title is basically a translation.

If you search ultra instinct you can also see the silver hair but i dont know if selfish doctrine is like the evolution of black hair, as Goku UI said it seems that the name is usted for both transformation...
