it's like when you undress yourself for the first time in front of someone you like / love - you want them to accept you and ask yourself whether they like you too and like what they see. I guess that's why, oh, and also because humans aren't supposed to see an angel's true form, not even a bit - Castiel might feel as if he is doing something morally questionable.
