It's a good thing she's constantly fighting for her life/heart down there in the Realm of Darkness. She'd be horrifically fat from being forced to eat nothing but fast food for the past 11 years if she wasn't. Maybe she just orders a salad every now and then to mix things up and sneak some vegetables into her forced fast food diet?

It's a good thing she has to fight for her life against the heartless everyday. What? It's good exercise, and is probably the only reason why she DOESN'T look like "that" after being forced to eat nothing but Good Burger for so long.
People seem to forget that exercise is the best way to keep yourself from getting fat, no matter what you eat. Exercise burns calories. Excess calories become fat. Therefore, constant exercise (constantly fighting for you life/heart) keeps you from getting fat off eating nothing but Good Burger.

Ansem's machine was attempting to digitize Kingdom Hearts, which is an entity of pure light. The explosion of the machine released a wave of light energy, which Riku blocked everyone else from. Riku was at the time contaminated by the darkness that was the lingering remnants of Xehanort's heartless, so the wave of light cleansed him. That's why he turned back to normal, and couldn't use the power of darkness anymore (like not being able to open a dark portal).
