I always thought what if Ice Age: Collision Course was about Diego and Shira? Because if you think about it, at this point, they had already done all they could with Manny (they even rehashed him being overprotective of Peaches from the fourth movie), so shifting the focus toward Diego and Shira would give them a chance to be fleshed out (especially Shira) as a couple, and maybe even be about the two of them having cubs instead of them simply mentioning having children. Heck, it could even have had them teaching their kids how to fit in. The possibilities are endless. What do you think?
