Love this form. Really wish it would get used again, but I understand why it doesn't happen - because then it would fall into the Dragon Ball trap of: "Okay, so what's the next form after this one?"
(Btw, not complaining about Dragon Ball. I love it, and I love how Super Sonic was inspired by it!)

I've seen some really cool fan transformations, not just for Sonic, but for other characters. But I think it should remain a fan community thing, instead of actually being implemented into the series. If people wanna draw Ultra Instinct Sonic or Super Shadow Blue, or whatever else, they're perfectly entitled to do so. Hell, I'd even jump on that bandwagon, myself. But again - confine it to fanart. Don't put it in the series.

Yeah, since it's something they've actually had feature in a game, it would be cool to see it return, even as an easter egg that has no impact on the story. I kinda hoped we'd get it in Sonic Mania, since Tails and Knuckles' super forms returned. Oh well. We can dream, can't we?
