If you want good french fries, choose a good potato !
Not a sugared one, full of water, and soft to the touch.
A very ferm one.
After obtaining the pieces of potatoes, i boil themΒ
a LITTLE time in water, to remove the starch.
(5 or 6 mins, no more, if the potato is good, it remains ferm)
I soak into COLD Water to stop the cooking, and i let dry naturally.
And then you can cook them !
I didn't do that and it wasn't good.
You can trust me !
