And the relationship was being prepared for quite a while. Even before Shippuden Hinata was crushing heavily on Naruto while he was chasing the dream of being with Sakura, but eventually he realized that he was chasing a fairytale and now having a more open mind, he was able to realize what Hinata felt for him.
That and Hinata running in front of pain to save Naruto and the final battle had quite a bit of time in-between. The stage from her love being absolutely obvious to the time where their love was mutual had quite a bit of time to grow, as it did during the war with both of them worrying about each other to the point where Naruto's main topic outside of the war was Hinata, which was a trait so far reserved for Hinata while Hinata began to inherit Naruto's will and courage. By exchanging the traits that made them unique, they slowly got closer and closer before the Last happened.

Your making it sound like women are disposable. In love, there's is no second option, that's why you follow people. You prepare weeks, months, sometimes even years to make that one moment you reveal your love absolutely perfect. In love, there is only one fish, because it's your sea.
And that's the point, kishi knew he was bad at romance, so he didn't write that anyone went on dates, he didn't write anyone kissing or having open lovey-dovey moments, because that is not his thing. What he does is he drops subtle hints. Someone being here and there, someone reacting oddly to a question, someone being unable to keep up eye contact. It's what he did with every single pairing in the entire show. Naruto and Hinata had ages of preparation, the only pairings that didn't were Ino and Sai or Choji and Karui etc. They were all meant to give the story a satisfying ending. Indeed, the last was fanservice, but people didn't want pairings, people wanted an ending. If he was doing it for the fanservice, why Choji and Karui, why not Karui and Omoi, why not Ino and Choji? Because he was going for a somewhat logical and most of all satisfying ending. And the most logical thing to do with Naruto and Hinata who've been lovebirds even before is putting the final seal on their relationship.

Emm not really.... He did say he wasn't good at righting romance and stuff but he said that he originally meant for Hinata to be the daughter of Ichiraku ramen's owner, and one of the reasons he would have loved going to ichiraku ramen was because he was inlove with Hinata. But i guess he changed his mind. And he said that he based naruto and hinata on Chichi and Goku (naruto has the same cholor scheme as goku in clothing, while hinata has the same color scheme as chichi).
And in the end he realized how many naruhina fans there were(obviously more than narusaku), so that made him more motivated into making it happen. It was like killing two birds with one rock, he got money and he accomplished what he originally meant for them.

I don't know where the hell you got that from, but that's incorrect.
1.He originally meant to have ichiraku as the main character, he also drawn a couple of prototype pics in which he places ichiraku as a akatuski member.
He originally wanted to put ichiraku in all the factions in the story as he progressed, so in one part of his life he's was a normal cook/hero and then he was a freedom fighter.
2.he never stated that hinata was supposed to be ichiraku's daughter, he only stated that he wanted her as the main heroine at some point in the story...maybe if sakura died perhaps? (we will never know)
3.Duh, we all know that he's a DBZ fanboy...heck, even a HxH fanboy too.
that's why he ripped off SS goku's color pattern and chichi's base design, not mention the chuning exams and the uchiha's sharingan was a HxH rip off of the hunter exams and Kurapika's scarlet eyes.
4.And no, he didn't realized nothing, he simply became greedy when he saw that romantic crap + crack undeveloped pairings followed by the larger demographic = more $$$$.

I have to put my two sense into this whole thing.
The reason why he said what he did is cause of the fact after making the NaruHina pairing he had claimed that Sasuke and Sakura weren't going to be a pairing. He had stated that Sakura would become a master medic and head of the hospital. However, he was given enough money to make SasuSaku a thing. Plus there was the fact enough of the fanbase would be mad that NaruHina became a thing but not SasuSaku.
Also, some of the pairings he had made at the end would have been more believable if the two people interacted. While Sakura and Sasuke interacted, it was a one way interaction. Sasuke ignored her while she went after him. Naruto and Hinata never interacted more than a few scenes in each chapter and most of the interaction happened in the Chunin Exams. There was the interaction in the Pein Arc but that didn't really count and they never even talked about her confession after stuff was settled.
Choji and Karui never interacted either other than sometime in the blank period. Ino and Sai didn't interact much either other than during the blank period. Kiba and Tamaki are implied lovers but they could just simply be two people that love animals. The only people that don't have pairings are Tenten, Neji (for obvious reason), Lee (though it comes to wonder how he got the mini-me) and Shino. Out of all the pairings, Shikamaru and Temari were the most believable since they interacted the most out of everyone.
Also, even though Kishimoto did say he was bad at writing pairings, he did have a pairing in the series that wasn't already made up. This pairing is Asuma and Kurenai, even though there wasn't really any screen time for the pairing itself they did eventually have a child. Granted from what I remember, Asuma didn't know about his daughter.
For me personally, whether or not an there was romance since the first day wouldn't be too important. If there was just more interaction between the characters then the pairings would make more sense. This leaves the question of how Choji/Karui and Kiba/Tamaki would interact without it being part of the blank period. As far as SasuSaku, I don't think it should have happened. There was never a real connection between the two other than the fanbase. At least if it ended up with NaruSaku, it would be more believable as there was way more interaction between the two.

This is how I would end it.(and btw, I'm currently making this same ending on paper, so I might upload it in the future.)
1.Sasuke and Naruto fights until they're almost dead, they impale each other in a final attack instead blowing each other's arms to form the gay ass blood heart they formed in ch 699.
2.Sakura arrives with Kakashi after the fight ends and performs emergency surgery on the spot to save them both.
3.a couple of hours later sasuke and Naruto awakes and start talking about how they feel about each other and make amends, however Sasuke says that he doesn't want to return to konoha because he will not live in the say village that had his clan and family murdered...therefore he will find a new place to settle and call "home".
4.Sasuke apologizes to Sakura, but he also tells her the he never liked her to being with(as it should've been like 693) and that she must find another person that can love her.
5.Then Sasuke says his goodbyes and start travelling the world as a nomad, but before he goes, he thanks naruto for saving him from his darkness...thus symbolically meaning that Naruto fulfilled his promise of "bringing sasuke back".
6.After everyone is released from the Infinite Tsukuyomi Naruto and Hinata have their promised talk after the war ends, Naruto tells her that he likes her but not in the way she likes him and that he doesn't have time for romance since he hasn't fulfilled his main goal of becoming kage and that there's much to do since the world is in ruins and they must help rebuild it.
7. 3 years have passed after the war, Naruto has been training hard and slowly becoming wiser as time goes by, then he's informed that the chunning exams are near to start this year...then he proceeds to take them, and he passes them with flying colors and grades.
8.Then Naruto proceeds to take the Jounin exams at the next year, and passes it as well.
9.5 years have passed after the war by now, and naruto has become wise enough to finally become hokage...Tsunade finally steps down to pass the mantle and torch to Naruto.(Yes, Kakashi being hokage was stupid and never should've happened)
10. The day after Naruto's kage nomination has been announced, a big ceremony and celebration is held for Naruto as he finally ascends to take the mantle as Hokage...then another we get a glimpse into the far future in which Naruto has brought everlasting peace and everyone is living happily and accomplished their dreams.
THE END!
See what I did? I left all the romantic shit open ended so it could be introduced properly in the future or not at all...LIKE KISHIMOTO SHOULD'VE DONE IT!
