From Not JJ's Enterprise, the C shaped recreation deck on deck 9 before it got moved to deck 7 during the TMP refit.
The green patches are actually small hydroponic gardens that where there isn't a viewport are for small trees like raspberry trees, tomato plants, coffee plants -- I'm sure Janeway would have love that, etc. And where there are viewports you have lettuce, carrots, potatoes and anything else that doesn't require tall trees.
This way there is more room for REAL plants to grow rather than using protein resequenced ones from the ship's food synthesizers, kinda like the Xyrillians who grow food on their walls -- but less extreme. And I figure they have vats of a type of seaweed or kelp that can grow as fast as a foot a day, and use that kelp to be converted into anything from a chicken sandwich and coffee, chicken soup, or anything else via food synthesizers and protein resequencers. Perhaps a type of kelp that flourishes with high levels of hydrogen -- which comes from waste water and broken into hydrogen and oxygen, carbon dioxide and electricity or some sort of energy source that isn't photosynthesis. And that kelp also recycles our sterilized poop -- sterilized with gamma rays.
I figure that though the 1701's food synthesizers are far advanced than the protein resequencers from her NX-01 predecessor, but no where near as advanced as the 1701-D's replicators. And the refit has more advanced food synthesizers which requires less gardens like this.
And the botanical garden on deck 20 also doubles as an orchard for tall trees for apples and oranges -- but only a limited selection due to the limited space on the ship.
And of course the bow is on the left, the aft is on the stern. In the centre is the ship's astrometrics lab that is above the lower high resolution sensor array, and the turbolift lobby with hydroponics. In those spaces has general equipment like CO2 scrubbers, water pumps, storage, and so forth.
