I think it was just one of the many jokes he put in to connect the Kane Chronicles with the Percy Jackson series.
It might also have to do with the fact they're both a part of death.

Oh yes. I remember someone doing an artwork with two characters from each book meeting each other (based on the books). But, if people have read both of the books, they'll know that Nico and Anubis isn't a coincidence.
