During the 19th century, white bread was the most desirable forms of bread in England. Bakers would sometimes substitute some of the flour with other things like chalk or alum so it was cheaper to make. It also made the bread whiter. Of course, that definitely had an impact on the texture. I found this fact very fascinating.
