Spectacular! I don't think I've ever seen an iced cheesecake....is this cheesecake in the way I would think of cheesecake? (i.e. biscuit base, liquidy cheese topping, either chilled or baked - although I've never actually had a baked cheesecake before!)

It's actually a baked cheesecake between two layers of lemon flavoured sponge; gives it an additional texture and makes it easier to ice.
