Because Undyne's house burned down, it's closer than the Ruins, and more people in the current party live in it than Asgore's house or the True Lab, I suppose.

The lag is probably too hot for Undyne taste but I wonder about Asgore's house. It seems to be a better choice.

She would largely prefer putting him in the safety of her house than in the bedroom of her deceased children, I think.
Also Undyne would probably not dare cooking in Asgore house.
Anyway, the skeleton bro house is better because accessible rapidly (by elevator then by boat) and avoid walking through Snowdin forest, which is far. As the convenience to not be Asgore house (which Undyne might not want to trash) and that Undyne knows probably better. And it has the convenience to have Grillby nearby for after they finish to pulverize their cooking attempt.
Also Sans and Paps house doesn't have any bad memories linked to it, and honestly, Toriel do often irrational actions, despite being for Frisk' sake. Remember, she fired ball their butt just to convince them to not cross the door and after let them wander on their own instead of simply... accompanied them to ensure they would be safe.
