It's a symbolic thing to wear on a zombie walk.
Ever since Plague Doctors became a sign of death/plague (ironic) , they've been linked with myths/urban legends of the living dead.

I saw one in a museum my dad took me to when I was little, like a display of actual plague doctor robes and mask on a dummy... the image never left me!

Yeah, Plague Doctor's the name. They were doctors who treated the bubonic plague, but became a symbol of death when people discovered that it was they who were spreading it.
