But I must say, I do believe she became a vampire after (and partially because) Simon left her.

She was born half vampire. Her mother was human.
Her father bit her during the mushroom war (i think) so she could survive.

Her father is ruler of the Nightosphere. He eats souls. He's no vampire. The way I see it is he's some kind of cartoon take on Satan or some shiz like that. But not a vampire. He's a demon/devil/something. Marceline states in "Jake the Dog" that she's half-demon. She clearly was not bitten in that alternate universe (she's aged and has no visible bite mark), so she had to have bitten after the war destroyed everything.
HOWEVER in "Bad Little Boy" Marshall says he's the son of a demon and the Vampire King. Since Marceline is telling the story, this can be interpreted to mean that Marceline is the daughter of a demon and the Vampire Queen. But she may be using the wording of the sentence to say that who she is was created by a demon and Vampire Queen, not necessarily that they were her parents.
This is mostly all speculation on my part, so if I'm wrong, feel free to offer another possibility.
