there're a couple of things I don't get about Urien: a) why does he feel it's necessary to rip off his fancy suit and fight in his underwear and b) how does he change the color of his skin?

I think I may have answers for you:
a) He's an adamant believer of the "Less is more." philosophy, which is why his power levels seem to rise dramatically when wearing less clothing. Poseidon save us if he ever decides to forgo on his banana hammock.
b) It may be an evolutionary mutation gained from visiting the tanning booth at least twice a day, that or he is in fact part chameleon.
