Well, eggs and rabbits are aspects of Anglo-Saxon fertility rituals that were used to worship the goddess Eostre, from whose name we get the word "Easter." It was hijacked by the Catholic Church to make the idea of converting easier for the pagans.

Yep, the Catholic Church has a LONG history of overwriting pagan holidays to win converts. That's why we celebrate Christmas in December even though Jesus was born in the spring: To overtake the Roman holiday Saturnalia.
