I love the undead, so an undead dragon is something I can't say 'no' to.
It makes me wonder, if the fire dragon and water dragon are likely to manipulate/breathe fire and water, what about the bone, metal and crystal dragons?

maybe? My thoughts were more along the lines of designing dragons that are made of these various materials/elements, so they are in a way, always manipulating these materials, in order to move, it would also be reasonable if they could manipulate the same element in their surroundings as if it were an extension of themselves.
so in theory, bone dragon could probably animate a corpse he passes by...
