In truth, the "one-vs-one fight" you mention often did take place.

Sun Tsu even made a reference to this hard fact in his still-studied book, "The Art of War" - "Cut off the head of the snake and the body will die."


As late as the US Civil War, if a commander challenged his counterpart to a duel, they were honor-bound to fight to the death without assistance from their men. Whichever one lost, lost the entire battle as his side had no leadership.

And if you lost someone high enough on the chain of command, the war would be over in one shot.

This was the main reasoning behind the assassination of Abraham Lincoln. If it had come during the opening moments of the Civil War instead of after the end, the Union would have lost its' "head" (Lincoln) and either been routed or forced to capitulate outright.

In short, it's not just in fantasy and the theory behind it is still applicable (though harder to actually do) to this day.
Today, command structure is much more decentralized, so losing one leader isn't so bad, but back then, if you lost your leader you lost the war.

And have better preparation. And have better weapons. And gargantuan dragons. And an indestructible source of magic power.
Of course all of this is NOTHING compared to the magic sword of the Chosen One.
