Technically speaking, a bitch is a female dog. However it also has a lot of other meanings. If you want to further research the meaning of the word I would suggest looking it up in an online dictionary. In this case though, "bitch" is being used as an insult as well as a sort of title for this particular character.
Mainly an insult though.
