Not only did Connie survive a battle with Peridot, a gem with a giant blaster capable of taking down gem-made pillars and who just single-handedly took down all 4 Crystal Gems, and Connie got away with all but a bruise on the arm and a bandage on her cheek. Granted, Peridot was badly damaged and her head was probably in the clouds, but I still think we've all underestimated Connie's battle capabilities if that's the worst of the damage she got away with.

Steven cannot poof, but I believe his body would be destroyed leaving the gem if his gem was torn away so, this could happen but Rose would be the one to come back.

That hasn't been addressed yet. He probably can poof, given how he's able to fuse and shapeshift. Better to ask the writers on Twitter, they've answered fan questions before.
