Instructions:
(Make sure you have iTunes 10, you can check that when iTunes is open by selecting "iTunes from the menubar and click on "About iTunes")
1) Close iTunes if it's open.
2) Open up Finder and go into your Applications folder.
3) Right click or Ctrl click on the iTunes icon and from the menu that appears you select "Show package content".
4) Go into the folder "Content" and then into the folder "Resources".
5) Scroll till you find a file named "iTunes.rsrc" and Save it to somewhere or rename it to itunesbackup.rsrc or something.
6) Next, inside the .sip file you downloaded is a new iTunes.rsrc file. drag it into the Resources folder.
7) open iTunes and you should see the new theme.

It's a pretty big download though, We only have 20Gb per month I think and the update was nearly 2 so I'll wait till the end of the month until I download it!

I've always wanted iTunes 11, since they have iMovie 11, what not iTunes
But I don't like the color theme, it's too bright for my taste

Weird, iTunes haven't told me about any updates. Maybe it has finally given up on me! XD
Anyways, why don't you test it for yourself? It wont crash or anything, I accidentally started iTunes without the iTunes.rsrc ones! It was all white, but it worked, lol

I use a program called ThemePark 3 [link]
It's quite easy, just find and open the iTunes.rsrc file and edit the images!

No, they're available to windows as well, but this theme isn't compatible with windows yet, I'll try and see if I can convert them later
