I think we'ere using different definitions; "Lacking in sensitivity to the feelings or circumstances of others." Basically, she's saying she doesn't care about other peoples emotions or situations. I don't see how that's a good thing?

That's actually pretty solid reasoning. The only problem is that most people don't use the "I'm insensitive" thing to be logical, they use it as an excuse to be assholes.
