{This is not a bashing of the characters, if people support this pairing that is perfectly fine, this is just to illustrate a point across}
I will have to admit that at first from watching the anime I did think that the pairing idea of Ryoga and Ukyo was indeed a cute idea but unfortunately after reading the Manga and seeing Akari introduced and her becoming Ryoga’s new love interest I don't find the pairing of Ryoga and Ukyo most likely to happen anytime soon. *I once again used material from the Ranma wikia page to help me with my point but also some of my own too*
Ryoga and Ukyo as a couple are joked about in both continuities, but somewhat more so in the anime (likely due to the fact Akari was never introduced in this continuity T^T). However, this pairing seems unlikely at best. She has bluntly and abrasively reiterated her derision towards his lack of judgement, direction sense and shyness/"cowardice", followed by hard whacks of her battle spatula. Ryoga also tends to be infatuated with girls who are consistently gentle with his feelings. They seemed even more antipathetic towards one another after being forcefully separated by the ghosts in the "Tunnel of Lost Love", possibly due to the previously referred "break-up curse", alternately simply due to blaming one another.
Regardless, they never cooperate, or speak, again in the manga. In their one real interaction in the anime after the Tunnel of Love story (the "Nihao My Concubine" movie) they were both quite hostile towards each other. Ryoga was initially uninterested in helping Ukyo to vanquish her unwanted paramour Sarutoru, the monkey man, who was courting her at a dinner table, turning to leave until she pointed out that his lack of direction-sense meant that he needed her help to find Akane. It was only then that he was willing to fight Sarutoru, and defeats the latters with a Shi Shi Hokodan blast, whereupon Ukyo seems thankful and leads him away.
Many people might argue about this point and try to compare the Manga and the anime to each other. This is one thing people have to understand is that yes the plots are the same to both but..different things happen in both the anime and the manga, I don't think I have ever seen one anime series that followed so closely to the manga like page by page because I have seen things happen differently in both when I compare a series.
Ex: When I started reading the Ranma 1/2 manga I was reading a part in one of the chapters and I was like "Oh that was different in the show" or "This part didn't happen." or when another character got introduced I was like, "She never appeared in the anime."
Also the creators of the show to which they are basing the manga off of might have dead-lines to meet or if the anime series was created while the manga series was still in the works they might have to put in some "filler episodes" to make up for lost time and fill the space until the new chapters came out.
What you have got to understand also is that yes, the anime is considered canon but...the manga is the MAIN canon or whichever one came first. In this case the Manga is the main canon because it was created before the anime came outand also if they think about it if the people in charge of making the anime did want to put Ryoga and Ukyo together they would have to run it by Rumiko Takahashi about it first and her possible answer to that was most likely "no” mainly due to the fact that her manga to Ranma ½ has ended and Ryoga does indeed end up with the real woman of his dreams (Akari-chan).
So with all that being said, is the Ryoga and Ukyo pairing a possibility (at least in the anime)? No.
