I am a huge fan of the MGE, however your monster would be a Minotaur not a Holstaurus, Holstaurus were domesticated and sweet and had no muscles. Minotaur in MGE is muscular and a warrior.

True, but I visualized and attempted to draw her coat pattern as black and white (Holstein colors), so it's somewhat hard to place the split in her character. I visualized her as a middle ground for the wild Minotaurs and the domesticated Holstaurus.

There were moments of perversion in my head during her creation, yes. Also, I've recently learned that there is a widespread interest in big cow-girls (Corruption of Champions being one example; one of their starring cow-girls is a La Bova named Marble). Marble is much like my Kyoko; differences being that Marble doesn't wear as much clothing and that her 'udders' are much larger than Kyoko's (I guess I need to make them bigger, lol)...and that Marble wields a gigantic warhammer as opposed to a battleaxe.

Kyoko is wonderful, her expression is confident without being arrogant. The chaps (for lack of a better term) are intriguing, outside of giving her a set of pockets, I can't think of what they'd be for. What are the characters on her belt buckle?
Any chance you might do a refer sheet on her?
I looked up the Monster Girl Encyclopedia. It's a very interesting read, is there more than just the two webpages? It'd be worth getting in book form.

Honestly, I have no idea why I gave her cargo pockets on her chaps; perhaps I'm better off with leather sequins, making it seem more Native American. Some cultural references I was considering for the Taurean race were the Sioux and the Vikings.
The character on her belt buckle is the kanji for the Earth element; like the Godai and the Classical Greek elements. The Taurean race are Geomancers (or Earthbenders to some who don't know that word), and their elemental affinity makes them rather stubborn and steadfast (and practically immoveable during some confrontations). Their major weakness, however; they can be incited into a riot if they see red when aroused. From a docile stance, they aren't that much affected by the color red, since they also have treaties with the Rénlóng, who are known to wear red Hanfus. and Changshans; it's only when they're really aggravated.
And...uh, I don't understand what you meant by a refer sheet; I do apologize.

The cargo chaps (there's a good term for them) are a good idea, places her more in contemporary times. The leather sequins could be an addition, sort of an individual touch. I like your idea of mixing in Sioux and Viking cultural norms, that's going to make for an very interesting background history.
I read the link article on the kanji character, thanks. Points towards she might have spent a bit of time in the orient and that culture rubbed off on her.
I must profess almost total ignorance on the Taurean race, I only recently started reading about the WoW universe. I'm a fan of the Minotaur from mythology when I was a kid, so the liking the Taurean was inevitable. Thanks for the overview.
No apologies necessary, I got the term 'refer sheet' from my niece in Oregon. I think 'data sheet' would probably be a better term. Usually a front, back and one or both side view of the character with a general outline of the characters race and specifics about that individual. Name, age, height, weight, scars/tattoos, battle honors, likes/dislikes, that sort of thing.

The original name I had for her race was 'Gyūki' (Ox Demon). Reading up on the Monster Girl Encyclopedia, the Holstaurus were a subspecies of Minotaur that were domesticated (for a lack of a better word). The only difference between the Minotaur species and the Minotaurs in Greek mythology and the Taureans of WoW, the Monster Girl Minotaurs are more humanoid; their faces are very human. I'd guess that nobody wants to get laid by such a creature with a bovine head.
The Monster Girl stories are overall hentai. I always liked the cow-girl creatures, but I could never see myself writing hentai about them. I'd probably be the first to use cow-girls in a non-hentai fic. I could stick with Gyūki as a name for their race, or maybe I'd have to invent a new name for them.
As far as a data sheet goes, I could get to work on that one.
