you take a picture as you normally would, then you take the exact same picture but without your subject (so just the background). You put the background picture into one layer (I used sketchbook pro but you can use gimp or something like that), the picture of your subject into a second layer. You just erase the part you want gone then from the second layer (and don't touch the first layer), and voila!
