It's safe to say that 2021 could've been Zelda's ultimate celebration of 35 years of legacy, and give the opportunity to old and new players ways to experience the series rather than sticking to BotW, by no mean, it's not a bad game, it's super grand !!! but different tastes are always welcome, so it would've been amazing.

So pretty much this a "What if" celebration of Zelda with fan favorite titles being ported to switch, given demands, both Wind Waker and Twilight Princess have been requested for years to come, despite we got Skyward Sword which IS a cool port, those additional two would've been great.
Now the most port i'd love to see is porting both Ocarina of Time and Majora's Mask in their 3D remake with HD upgrades, now that sound overkill giving the current N64 Expansion, but in all would be great to have fresher make over for them.
