I think Atai wanted to make her his property since he saw her the first time when she stopped him from whipping a slave. Atai definitely finds the young Togruta attractive and would love to make her his sex slave

I think her defiance is what enticed him the most, to make Ahsoka pay for a perceived slight and make her as docile as that slave he was gonna whip.

I agree. Atai was very pissed after Ahsoka stopped him from whipping a slave, knocking him out at the auction and pushing him from the ceiling. He liked her defiance, it made her taming more fun.
