I used a custom torso with it's own limbs, I also did some modifications to the head.
As for the armor, some parts are just like the original, I just placed them over the model, some other, like pants and jacket, I had to model using the body as base, then map the UV using the original texture.

I use photoshop for setting the textures as well. However I don't know much on how to do things in it, I used a couple of tools in the "adjustments" section, like "Hue/Saturation", "Color balance" and "Curves" to set the colors right, but there's probably a better way to do things, is that I really haven't check many tutorials about PS as I did for blender.
Sadly we don't get many of these "things"(I hope I got ur meaning) regarding LoL, my guess it's mostly due the actual models being... not so visually well done as their splash art. So people need to go through all trouble of re-setting the model or making a new model altogether, so yeah... But we'll get there.
