These are a fictional deer species, and there's a lot more context happening than a normal rut. But even in real life, deer sometimes die during the rut. Usually from complications.
Whether or not Eisendahl would have tried to kill Fen is unknown, but Rig certainly believes he would have.

Complication? like: two stags stuck because of their antlers? I have already seen, it's not pretty to see, especially if one of the two finishes always break the other's neck.

Antlers stuck yes, definitely. Sometimes they get stuck long enough that wolves or other predators move in on them. But they can also become injured during fights and get infections. It also leaves them exhausted, which makes them easier prey, especially if they're also wounded.
