What does it represent? The cross, stars, etc?

It was the Dutch and the Swedes that made the 1st European Settlements in New Jersey before the English seized control of it.  The cross for the Swedes also seen on their flag except it is yellow.  The 13 stars are representative of New Jersey being one of the original 13 colonies.  The three plows in the coat of arms represent New Jersey being the 3rd state to ratify the U.S. Constitution.

Interesting, I know there was New Sweden and New Netherlands colonies.
