Actually hair turns lighter in the sun because your hair is technically dead and can not reproduce melanin, but then again we are talking about magical candy colored horses haha

gonna throw in my two cents too lol. my hair gets super blonde (streaks) after sun exposure and i have really dark brown hair (for context my dad has black hair and my mom red/blonde)
i actually have weird chunks of blonde hair that i never would have noticed in winters
but i looove ur applejack, i also picture her more broad + w+

Oh strange! I'm a brunette so I wouldn't really know, perhaps the body starts making hair with more melanin in the summer (or in Florida's case all year long-) to try and protect your scalp better? :0c
