While ballgowns look pretty, they're not very practical outside of the castle. For traveling and riding, you can't go wrong with trousers. Despite the time period the Enchanted Forest appears to be, women are seen wearing pants there. Snow White prefers trousers when on the run from the Queen and Regina wears trousers when riding horses. Hilda, like many princesses in the Enchanted Forest, is a skilled archer and horseback rider. Despite the show, I actually got the idea from reading about a deleted scene in Serenity where Inara, played by Morena Baccarin (who I also picked to play Hilda), was training companions in archery, even showing herself to be skilled with a bow and arrow. I was a little hesitant about making Hilda skilled in archery because I thought it would be ripping off Snow White. Then I read somewhere, can't remember where, that it was considered cultured and ladylike for women to know archery. That's why, in the Narnia Chronicles, Peter got a sword and Susan got a bow and arrow.

I gave Hilda a gray cape to represent the donkeyskin she wears. Not a fur coat make from donkeyskin, actual donkeyskin. In the original fairy tale, the princess requests three gowns as conditions for accepting her father's marriage proposal at the request of her fairy godmother. Then her fairy godmother has the princess demand that the king skin his prized donkey that poops gold (in some version, gold tumbles out of the donkey's ears) as another engagement present. The princess takes the gowns and the skin and flees to a nearby kingdom. In my fanfic, Rumplestilskin enchants the Donkeyskin so that it cloaks Hilda's beauty, for a price. Donkeyskin is also Hilda's alias when she flees the castle. I couldn't find actual donkeyskin in the dollmaker (of course), so I had to make due with a cape. I also based the traveling clothes off of what Priscilla wears in Out of the Past. I'm not sure if this is entirely accurate to the traveling clothes worn by women in the Enchanted Forest, but it was the best I could do.
