Awesome work man.
About the fight. Depends on which Hulk we're talking about. If it's the shit for brains "Hulk Smash" version, and the fight is properly written, Thor takes it. Flight, Long Range and ridiculously powerful attacks in the form of lightning and the GodBlast. If it's a Hulk with actual brains, or in his better incarnation, the "World War Hulk", Hulk should be able to take it.
About that Fear Itself thing. You guys need to know how to recognize a bait. Thor would NEVER admit that, it was a pure and simple ruse, to get the Hulk to lower his defenses. Also, Thor collapsed from exhaustion because he had been fighting the Hammers for quite a while by then, and the Hulk, even without the hammer, is not exactly a pushover.
brush up on your reading. Spider-Man, during Spider-Man Disassembled: Evolution, said some interesting stuff about the Hulk, his powers, and why he reverts to Banner. read up and comment after that. Good reading.

Well... judging from all of their encounters, there is nothing in Thor's arsenal that can take Hulk down nor has the Thunder God been able to defeat The Hulk. Thor even stated so in Fear Itself #5...
"You know, I cannot beat you. And I never could."
His words were true and also he said them to get Hulk close enough to unleash an extremely powerful attack to remove Hulk from New York, but at a great cost as Thor collapsed from exhaustion, his last words being...
"To be continued, Banner."

Ah, but one writer says one thing and another says another (as Peter David and Erik Larson spat over the same Hulk v Doc Ock - tho Peter David had a valid point).
